::ale jail + caribe bistro=amazing beer dinner:: minneapolis photographer

My brother Adam, a Rogue Certified Cicerone, and Caribe Bistro paired up for an evening of amazing Caribbean dishes and specialty beer.  I attended one beer dinner before with my brother years ago.  Little did I know, I would be attending one of his beer dinners! ( I am obviously very proud of him) :)  I cannot describe how amazing the food at Caribe was.  If you can, you really should stop in there to try for yourself.  The food was undeniably delicious, the staff was so friendly and the beer was amazing!  Check Caribe Bistro’s blog for more on what was served that night.  Another place for you to stop into is the Wine Thief and The Ale Jail in St. Paul.  My brother is the beer warden at the Ale Jail and whether you like beer or wine you will be glad you stopped in.

The entire day was gorgeous! While on my run I could not wait for Jayce to be finished with school for the day so he could be outside, too. As soon as he came home we had to run a few errands. He was a trooper and I promised him tonight we would finally take out his scooter he received on Christmas. This little photo session was not planned at all. The very last minute I decided to bring along my camera and my 85mm…I am glad I did because I love these images:)It looks like a fall day, but it’s actually new beginnings of life right around the corner! I love spring and love what it brings in a couple of months…Green grass of June. Which to me is the prettiest shade of green. It’s coming soon, Minnesotans!

Heidi M. - So, wait… we both have a son named Jayce/Jace who received scooters for Christmas and could not WAIT to get it out, come Spring? And you mentioned green in this post, is that your favorite color too? I’m thinking we need to be BFFs, it’s open to discussion though. ;)

I never knew this historic home existed! I arrived early and had a chance to peek around for awhile. I loved shooting here and seeing all the history was quite amazing. Once the guests start to arrive they are offered a tour of the home before the wedding ceremony starts. Very cool if you ask me! It was great to see Jodell and Jon together. Usually we do the engagement session before the wedding but we are doing the opposite. Look for their engagement photos as the weather starts to warm up and the grass is a little greener:)For now, here are their lovely wedding photos!

I can’t believe Elizabeth is already two!  She was such a trooper as we went out in downtown Rochester on Sunday morning.  It was so cold, but we had a lot of fun anyway! Check to see how much she has grown….such a big girl:)

::paleo crunch:: minnesota photographer

So I know this has nothing to do with weddings or kids…but I have found a very delicious new recipe thanks to my friend, Shawn.  He was making it one night and I couldn’t wait to try it myself.  It is a great snack, full of raw- good- for -you foods.  He is super intense into Crossfit and has since followed the Paleo diet.  I am not going to go into details with that as I know nothing about it, but click the Crossfit link if you are interested in finding more about the two.  Here are some fun pics of this amazing snack….

Paleo Crunch

Dry Ingredients:

1/2 cup raw pumpkin seeds

1/2 cup raw sunflower seeds

1 cup almond meal

1 cup shredded unsweetened coconut

2 cup raw slivered or chopped almonds

Wet Ingredients:

1/2 cup grape seed oil

1/2 cup raw honey

1-2 teaspoons vanilla

Preheat oven to 325.  In large bowl add dry ingredients.  Add wet ingredients and combine well.  Spread thin on baking pan and bake for 25 minutes.  Stir and bake another 5 minutes or until golden brown.  Cool 5-10 minutes in pan.  HOW EASY IS THIS?!  :)

This is so delicious, definitely try it yourself…it is so easy and I can’t wait to see what else he makes!  All the above ingredients I found at Trader Joe’s or Byerly’s.  Almond meal is a little expensive so be prepared for that.  Although, I will probably get about  4 batches out of the almond meal.  The seeds came in big bags so they will last awhile, too! Also I read you can use agave nectar instead of  the raw honey :)

 

UPDATE:

I used coconut oil recently as requested by Emily in the comment section below.  And I used Agave nectar this time and i actually liked the taste better.  I also reduced baking time to about 15-18 minutes and had a less crunchy batch, which I also loved.  It has been fun experimenting!

Emily - @Tracy – Coconut Oil is infinitely better for you. Grapeseed Oil (just like soybean and canola) is not recommended among the Paleo/Primal dietary experts like Robb Wolf and Mark Sisson. Plus, it adds extra awesome flavor.

Tracy - Thank you for posting this. I just found it while eating a Paleo Krunch bar from Steve’s Original. LOVE LOVE LOVE it, but knew there had to be a recipe out there for it. Only difference is that he uses coconut oil instead of the grape seed oil. Wonder which one is better for you. I’ve been 100% Paleo this year and I’ve never felt better in my life!

Dole - I bought all the ingredients at Trader Joes after looking at packet of Paleo Crunch at the box this morning. No coconut available, but I’m going to throw some banana chips in the food processor to rough them up,and then see how it turns out. Thanks for the recipe, I was LOST on the heating and binding ingredients!!!
